Make this Pressure Cooker Chicken Noodle Soup in less than 30 minutes with less calories replacing your noodles with “zoodles”.
2 tablespoons olive oil
3 carrots, chopped
2 stalks celery, sliced
1 small onion, chopped
1 clove garlic, chopped
1 teaspoon salt
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
4 cups chicken broth
2 (12 oz.) packages Green Giant® Veggie Spirals® Zucchini
4 sprigs fresh parsley
1/2 teaspoon thyme
Add olive oil to electric pressure cooker. Select the Sauté setting; add carrots, celery, onion, garlic, and salt. Cook 4 minutes or until vegetables are softened. Press Cancel.
Add remaining ingredients to pressure cooker. Lock the lid and close the pressure release valve. Select the Pressure Cook or Manual setting. (If using Manual setting, select High pressure.) Set the timer to 5 minutes. When done, press Cancel and use the quick release method to release the pressure.
